You mentioned you'd love a cute coffee and library date, so I tried to brainstorm around that and kept everything close to places that I'm somewhat familiar with.

I put together 3 different versions of the day below. There's one built around coffee, one for wandering around libraries and bookshops, and one if you wanted to do something more active/hike. Also open to other suggestions/places you might have.
